Ingredients
Fried Chicken
4 pieces boneless chicken thighs
1 teaspoon smoked paprika
1 teaspoon onion powder
1 teaspoon garlic powder
1/3 cup buttermilk
1 large egg
1 cup or more oil for frying
salt & pepper to taste
Flour Mixture
1 cup all-purpose flour
1/4 cup panko breadcrumbs
3/4 teaspoon smoked paprika
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon ground pepper
Slaw & Spicy Mayo
2 cups coleslaw mix
1/2 cup mayonnaise
1 tablespoon hot chili pepper sauce, sriracha
1 teaspoon lime juice
salt & pepper to taste
Assemble Sandwich
4 pieces fried chicken
¼ cup Mike's Hot Honey
4 Brioche buns
1/2 small red onion, thinly sliced
¼ cup pickles
Cole slaw
Spicy mayo
Instructions
- In a bowl, toss chicken thighs, paprika, garlic, onion, salt and pepper ensuring that each piece is entirely coated.
- Whisk together the egg and buttermilk then pour mixture over seasoned chicken thighs. Set the chicken aside to marinate in the mixture for at least 1 hour (longer is better).
- In a medium bowl, whisk together the flour, breadcrumbs, paprika, onion powder, garlic powder, salt and pepper.
- Heat oil in a deep frying skillet over medium heat. Make sure the oil is heated to at least 350 degrees F before adding the chicken.
- Dip each piece of the marinated chicken thigh into the flour mixture ensuring that it is entirely coated. Add coated chicken thigh to heated oil and deep fry for about 4-6 minutes or until chicken is golden brown and cooked thoroughly.
- While the chicken is frying, prepare the spicy mayo sauce in a small bowl. Mix together the mayonnaise, chili pepper sauce, lime juice, salt and pepper. Add some of the sauce to the coleslaw mix leaving some for the buns when assembling the sandwich.
- THE FUN PART - drizzle a boat load (as much as you like) of Mike's Hot Honey over the chicken thighs and assemble a sandwich to your liking.
