What to Serve With Taco Pasta Salad

Round out lunch with:

  • Grapes
  • Apple slices
  • Watermelon
  • Cucumber slices
  • Bell pepper strips
  • Snap peas
  • Yogurt
  • Cheese sticks
  • Crackers
  • Pretzels

Recipe Tips

  • Cook the pasta just until al dente so it doesn’t become mushy.
  • Let the taco meat cool before mixing everything together.
  • Chill for at least 30 minutes before serving for the best flavor.
  • If making several days ahead, reserve a little dressing to stir in before serving if the pasta absorbs some of the sauce.
  • Dice the vegetables into small, bite-sized pieces so they’re easy for kids to eat.

Storage & Meal Prep

This Taco Pasta Salad is perfect for meal prep.

Store it in an airtight container in the refrigerator for up to 4 days. The flavors actually get even better after a few hours in the refrigerator, making it an ideal make-ahead lunch recipe.

Frequently Asked Questions (FAQs)

How long does it last?

Store in an airtight container for up to 4 days.

Can I freeze it?

I don’t recommend freezing this recipe since the creamy dressing and fresh vegetables don’t thaw well.

What pasta works best?

Short pasta shapes like rotini, bowties, shells, or cavatappi all work great because they hold onto the dressing.

Can I make it healthier?

Absolutely! Use lean ground turkey, swap all of the mayo for Greek yogurt, and load it up with extra vegetables.

Can you eat ground beef cold?

Yes! As long as the ground beef has been cooked to a safe internal temperature (160°F), cooled promptly, and stored in the refrigerator, it’s perfectly safe to enjoy cold.

That’s one of the reasons this Taco Pasta Salad makes such a great school lunch. The seasoned beef tastes delicious straight from the fridge, and because the salad is served cold, there’s no need to reheat it before packing. Just be sure to keep it chilled with an insulated lunch box and an ice pack until lunchtime.

  • Pour the dressing over the salad and toss until everything is evenly coated.
  • Cover and refrigerate for at least 30 minutes before serving to allow the flavors to meld together.

Notes

  • For a vegetarian version, simply omit the ground beef and add an extra can of black beans or your favorite plant-based ground meat substitute.
