Ground Turkey and Sweet Potato Taco Skillet

Ingredients
  

  • 2 tbsp olive oil
  • 1 lb ground turkey
  • 2 cups sweet potato about 1 large sweet potato, peeled and cubed
  • 1 medium onion diced
  • 1/3 cup green bell pepper diced
  • 1/3 cup red bell pepper diced
  • 3 cloves garlic minced
  • 1 packet taco seasoning or homemade seasoning
  • 1 can black beans drained and rinsed
  • 1 cup corn kernels
  • 1 can diced tomatoes drained
  • fresh cilantro chopped (for garnish)
  • Lime wedges for garnish
  • Shredded cheese (cheddar or Mexican blend) for topping

Optional Homemade Taco Seasoning

  • 1 tsp paprika
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1/2 tsp black pepper
  • 1 1/2 tsp salt

Instructions
 

  • Heat 1 tablespoon of olive oil in a large skillet over medium heat. Start by browning the ground turkey in a large skillet over medium heat. Break it apart with a wooden spoon, or meat mincer.
  • When it's half way cooked, add half of the taco seasoning blend and continues to cook until the meat is no longer pink. This usually takes about 5 minutes. Once it's done cooking, remove the turkey from the pot and set it aside.
  • In the same skillet, heat 1 tablespoon of olive oil, sauté the diced onion, bell pepper, and garlic over medium heat until the vegetables soften, about 3 minutes.
  • Add the cubed sweet potatoes, diced tomatoes, corn and black beans to the skillet along with the remaining taco seasoning blend. Stir everything together and let it cook, stirring occasionally, until the sweet potatoes are tender (about 10 minutes).
  • Once the sweet potatoes are tender, return the cooked ground turkey to the skillet. Stir everything together and cook for an additional 5 minutes.
  • Remove from heat and top with shredded cheese, freshly chopped cilantro and a squeeze of lime juice. Add your favorite taco toppings, like shredded cheese, sour cream, or avocado.
