Brown sugar bacon wrapped scallops are perfect for every occasion. They are an impressive yet easy to pull off appetizer or dinner idea that will have your guests asking for seconds.
Sprinkle the scallops with salt, pepper and onion powder. Then, wrap the scallops with the bacon and secure with a toothpick. Each scallop is wrapped in about 1/2 a strip of bacon.
Heat a skillet with olive oil and sear the scallops in a single layer for about 3-5 until the bacon is crisp and cooked. The goal is the get the bacon crisp and at least partially cooked without overcooking the scallops.
Remove the scallops from the pan and set aside. Discard bacon grease from the pan then add unsalted butter, brown sugar, soy sauce, chicken broth, garlic, thyme, ginger and red pepper flakes. Whisk it all together until the sugar dissolves the mixture thickens.
Add the scallops back to the pan and let it simmer in the sauce for about 3-5 minutes until the bacon is fully cooked and the scallops are tender. Make sure to continuously baste the scallops with the sauce.
Sprinkle with parsley, serve immediately and enjoy!
