Easy Weeknight Dinner | One-pot

This one pot curry lentil soup is an easy, flavorful dinner recipe that your family will love. It is comforting and packed with tons of warm aromatic spices, and can be made in under an hour, making it the perfect weeknight meal.

Ingredients

lentils carrots ginger garlic onion coconut milk bay leaf cilantro salt & pepper

Step 1

Heat some olive oil in a dutch oven over medium heat. Add chopped onion and red bell pepper and saute for about 5 minutes until fragrant.

Add the garlic, ginger, curry powder, cumin, coriander, cinnamon, turmeric, and chili powder. Toast the spices for about 2 minutes until fragrant then add the lentils and carrot.

Add the crushed tomatoes, vegetable stock, salt and pepper, bay leaf and cilantro. Stir well, cover and simmer for 25 minutes until the lentils are tender.

Step 4

Once 20 minutes has passed, add coconut milk and allow it to simmer for a the remainder for time.

Ladle into a bowl, drizzle with coconut milk and garnish with cilantro. Enjoy!
