Chicken wings are rubbed generously with jerk seasoning, baked then drizzled with sweet chili sauce enhanced with butter, fresh garlic, ginger, and soy sauce. These sticky jerk chicken wings are finger-licking good and ready in less than one hour.

Whenever I’m gearing up for a party or gathering, there’s one recipe that’s always at the top of my list: these Sticky Jerk Chicken Wings. I’ve lost count of the number of times these wings have stolen the show at my get-togethers – they’re a guaranteed hit! Trust me, once you’ve served up a batch of these Sticky Jerk Chicken Wings, you’ll have everyone asking for the recipe – it’s a flavor-packed party essential that’s become a staple in my hosting repertoire.

Well, I am here to tell you that chicken wings can be healthy, and baked chicken wings are your savior. Baked chicken wings are healthier than the traditional deep-fried chicken wings because you omit using a ton of oil. With this method, you get to enjoy your favorite food that is lower in fat, without sacrificing flavor.

  • Whole chicken wings: Clean and dry them before cooking.
  • Seasoning: Season the wings with salt, black pepper, paprika, garlic powder, and onion powder.
  • Jerk seasoning: This popular Jamaican seasoning blend includes cayenne pepper, allspice, thyme, garlic powder, onion powder, smoked paprika, brown sugar, ginger, nutmeg, and cinnamon. You can create your own dry seasoning blend or create a homemade jerk marinade. I usually use a store-bought jerk seasoning marinade but I also love this homemade jerk marinade recipe.
  • Cornstarch powder: This absorbs any excess moisture and ensures the chicken skin stays crisp. Baking powder works as a substitute.

Sweet Chili Sauce

  • Sweet chili sauce: Use your preferred brand. Sweet chili sauce typically contains red chili peppers, rice wine vinegar, fish sauce, and a sweetener like sugar or honey. The overall taste is sweet, spicy, and slightly sour.
  • Garlic cloves: Freshly grated.
  • Ginger: Freshly grated.
  • Low sodium soy sauce: Use low sodium since we are seasoning the chicken wings with salt. It adds a distinct umami flavor.
  • Unsalted butter: Because butter makes everything taste better.

How to Make Sweet Chili Jerk Wings

Start by cleaning and patting dry the chicken wings. In a bowl, mix together soy sauce, jerk seasoning, avocado oil (or olive oil), salt, pepper, paprika, garlic powder, onion powder, jerk seasoning. Toss the chicken wings in the marinade, ensuring they are well-coated. Let them marinate for at least 30 minutes to allow the flavors to penetrate. When ready to cook, toss the wings in cornstarch right before placing them in the oven.

Preheat your oven to 425°F and line a baking sheet with a baking rack, parchment paper or aluminum foil. (I like to use a rack for oven baked wings) .

Place the marinated wings on the prepared baking sheet in a single layer, ensuring they are not overcrowded. Bake in the preheated oven for 45-50 minutes or until the wings are golden brown and crispy. Flip the wings halfway through the cooking time for an even crispiness.

While the chicken wings are baking, prepare the sweet chili sauce by combining all the ingredients in a saucepan and simmer for about 2 minutes.

Once the wings are done transfer them to a large mixing bowl and toss them in the sweet chili sauce.

Arrange them on a platter and get ready to watch them disappear in no time! Serve your Sweet Chili Jerk Chicken Wings with additional sweet chili sauce or a cooling dip like ranch or blue cheese dressing to balance out the heat.

Pro Tips for Oven Baked Chicken Wings

  • Ensure the chicken wings are completely dry before seasoning them. This ensures the seasoning sticks to the chicken and the chicken doesn’t get soggy.
  • Cook at high heat. Do not cook below 400F if you want extra crispy skin.
  • Wait 3-4 minutes after the chicken has come out of the oven before glazing them with sweet chili sauce. Waiting a few minutes allows ensures the wings stay crispy even when drenched with sauce.
  • Bake on a rack to allow airflow around the wings.
  • An optional step is to put the tossed sweet chili jerk wings back in the oven and set them to broil for 1-2 minutes so the sauce can caramelize.

  • Chicken: this recipe can be used for chicken legs, chicken thighs, or chicken breasts. Just remember that cooking times will vary based on the size and cut of meat.
  • Air Fryer Chicken Wings: Don’t have an oven? Cook the jerk wings in the air fryer at 400F for about 20 minutes, flipping halfway through.

Air Fryer Chicken Wings

You can also make these chicken wings in the air fryer. Cooking chicken wings in the air fryer is usually my go-to method because they are always come out perfectly crisp.

To make air fryer chicken wings, start by preheating your air fryer to 400 degrees Fahrenheit, then place the wings in the basket in a single later. Cook for 15-20 minutes, flipping the wings halfway through, until they are golden brown and crispy.

Can Sweet Chili Jerk Wings Be Made Ahead?

Yes! Bake the chicken up to 3 days in advance and reheat it in the oven or air fryer before tossing them in sauce and serving.

Storing Leftovers

Store leftover sweet chili wings in an airtight container after they have cooled down. They will last up to 3 days. To reheat, place them in the oven at 400F for 8-10 minutes or in the air fryer at 375F for about 5 minutes.
