Ingredients

2 1/2 cups crispy rice cereal

1 cup natural peanut butter

1/4 cup maple syrup

1 tablespoon coconut oil

2 bars dark chocolate

Instructions

  1. In a bowl, combine the crispy rice cereal, peanut butter and maple syrup.
  2. Line a 8x8 baking pan with parchment paper. Add the mixture to the pan and press evenly to form a flat surface.
  3. In a microwavable bowl, add dark chocolate bars (chopped) and coconut oil. Melt for 30 seconds, stir then melt for another 30 seconds. Stir until chocolate is completely melted.
  4. Pour the chocolate evenly over the rice cereal and place in the freezer for 20-30 minutes then cut into squares.
  5. Store in an airtight container in the fridge or freezer.

My husband is allergic to coconut in any form. What can I use instead of coconut oil?

Great question – the purpose of the coconut oil is to help the chocolate chips melt smoothly so you can definitely leave it out. Melt the chocolate chips in a microwave safe bowl without the coconut oil for 30 seconds. Stir the chocolate chips then microwave for another 30 seconds or until smooth. Make sure to keep an eye on it to prevent burning.
