What is the difference between peach cobbler and peach crisp?

The main difference between peach cobbler and peach crisp is that the first has a biscuit topping and the second, has a crumb topping.

Ingredients

For the peach filling:

  • Fresh Peaches: Sliced (about 4 medium peaches).
  • Brown Sugar: For a sweet molasses flavor.
  • Vanilla Extract: This adds vanilla flavor that complements the added spices.
  • Cornstarch: This thickens the peach filling.
  • Spices: I use a medley of ground cinnamon, nutmeg, and ground ginger.
  • Pinch of Salt: Just a sprinkle balances the sweetness.

For the crisp topping:

  • Old-fashioned Rolled Oats: They have a mild flavor that pairs well with the spices added to this recipe. It gets crispy when baked and has a nice, chewy consistency that contrasts well with the peach filling.
  • All-purpose Flour: For the structure of the coating.
  • Packed Brown Sugar: For sweetness.
  • Spices: I use ground cinnamon and nutmeg.
  • Salt: To enhance the other flavors.
  • Unsalted Butter: Use semi-cold butter, cut into cubes.

Optional serving suggestions:

  • Vanilla Ice Cream
  • Whipped Cream

How to Make Peach Crisp

Prepare Peach Filling

Preheat your oven to 400 degrees F. and grease an oven-safe dish. I use a pie dish.

In a large bowl, combine the sliced peaches, brown sugar, vanilla extract, cornstarch, cinnamon, nutmeg, ginger and salt. Mix well until the peaches are evenly coated.

Make Crisp Oat Topping

In a separate bowl, make the crisp topping. Combine the all-purpose flour, rolled oats, brown sugar, cinnamon, nutmeg, and salt. Mix it all together. Add the cold cubed butter to the mixture.

Using a pastry cutter or your hands, work the butter into the dry ingredients until the mixture resembles coarse crumbs and the butter is evenly distributed. The topping should clump together when pressed. Sprinkle the crisp topping evenly over the peach filling in the baking dish.

Bake Peach Crisp

Bake for 25-30 minutes or until the topping is golden brown.

Cool & Serve

Remove the peach crisp from the oven and let it cool slightly for about 10 minutes before serving. To make it even better, serve the peach crisp warm with a scoop of vanilla ice cream.

Pro Tips

  • Use ripe peaches for those distinct peach juices. You can tell a peach is ripe by gently squeezing it. It should have a light give. They are also very fragrant.
  • If you have underripe peaches, speed up the ripening processing by placing them in a brown paper bag at room temperature one day ahead.
  • Use very cold butter so it doesn’t melt too quickly in the oven. If the butter is too hot, the oat crumble topping will just melt into the peaches and you won’t get that crispy coating.
  • Do not overmix the oat topping for it will become pasty.

Recipe Variations

  • Peach Crisp with Canned Peaches: After draining the syrup, add the peaches directly to the baking dish with the other ingredients (except for brown sugar).
  • Frozen Peaches: If you want to indulge when peaches are out of season, use frozen fruit instead. (It’s frozen at the peak of its freshness so it’s nearly as good.) Thaw them first. Then bot them with paper towels to remove any excess moisture before proceeding with the instructions for this recipe.
  • Without Oats: Instead of oats, make a crispy topping by combining flour, sugar, brown sugar, cinnamon, and salt. Add butter to the flour mixture with a pastry cutter until you create “crumbs.” Then sprinkle them over peaches in one even layer.
