Jamaican Coconut Curry Shrimp

Jamaican curry shrimp is a rich and flavor staple in every Jamaican household. It is an easy, simple and extremely flavorful dish that is ready in 25 minutes. Made with fresh herbs and spices like onion, thyme, ginger and garlic paired with a rich jamaican curry powder and coconut milk; there is no doubt that you will want to make this your go to weeknight dinner recipe.

1 pound raw shrimp, peeled and deveined

½ teaspoon salt

½  teaspoon ground pepper

1 teaspoon Jamaican curry powder

½ teaspoon garlic powder

½  teaspoon onion powder

½ tsp paprika 

Coconut Curry Sauce

2 tablespoons olive oil

1 tablespoon Jamaican Curry Powder

1 teaspoon fennel seeds

½ cup yellow onion, sliced

½ cup green bell pepper, julienned 

½ cup red bell pepper, julienned

2 sprigs fresh thyme

4 cloves garlic, minced

1 tsp fresh ginger, grated

1 scotch bonnet pepper, seeds removed

13.5 oz can unsweetened coconut milk

Salt & pepper to taste


  1. In a bowl, toss together shrimp, salt, pepper, curry, garlic, and onion powder. Set aside.
  2. Heat olive oil in a skillet over medium heat. Add 1 tablespoon curry powder and fennel seeds and stir for about 1 minute. Add onion, bell peppers, scotch bonnet and thyme and saute for 3 minutes or until fragrant and peppers are slightly cooked. 
  3. Add garlic, ginger and coconut milk and bring to a boil for 3-5 minutes. Stir constantly.
  4. Add shrimp to the curry sauce and simmer until shrimp is thoroughly cooked. Stir occasionally. Add salt and pepper to taste.
