Healthy protein peanut butter cups are an easy and delicious snack to satisfy your sweet tooth without feeling guilty. They are a protein dense , no-added sugar, vegan and gluten-free treat will have you making plenty of trips to the kitchen.

Lately, I’ve been craving all things chocolate but I am displeased by how much sugar and preservatives are found in store-bought chocolate snacks. To indulge guilt-free, I’ve committed to creating healthier homemade versions of my favorites — Peanut Butter Cups. These homemade peanut butter cups are hands down the best. They are packed with plant-based protein, clean ingredients, and do not lack in flavor. All you need are 5 simple ingredients and you’ll be the happiest person alive.

Healthy protein peanut butter cups are a great way to enjoy a sweet treat while also getting some some extra nutrients that powders the body. They are a great family-friendly treat, even your kids will love them. I guarantee that they won’t last long in your house.

How to make healthy protein peanut butter cups

To make protein peanut butter cups, you will need your favorite protein (mine is Orgain organic plant-based protein), dark chocolate chips or semi sweet chocolate chips, peanut butter, coconut oil, pure maple syrup, and salt.

  1. Melt the chocolate: Add chocolate and coconut oil to a microwavable safe bowl. Microwave in 30 seconds intervals until chocolate is completely melted. Stir well between each interval.

2. Make the first chocolate layer: Line a muffin pan with cupcake/muffin liners. Add two tablespoons of melted chocolate to each muffin cup. Place the muffin pan in fridge for 10 minutes until chocolate hardens

3. Make the peanut butter filling: In a bowl, mix together peanut butter, protein powder, maple syrup and salt.

Once the first layer of chocolate hardens, remove muffin pan from fridge and distribute about 1-2 teaspoon of the peanut butter filling to each muffin cup.

4. Add the final layer of chocolate: Spoon the remaining chocolate on top of each cup and sprinkle generously with flaky sea salt. Place the muffin pan back into fridge for 15 minutes until top layer hardens.

Ingredients

10 ounces dark chocolate

1 1/2 tablespoon coconut oil

1/2 cup Peanut Butter

1/3 cup protein powder

1 tablespoon maple syrup

Instructions

  1. Line a muffin pan with 12 muffin liners.
  2. Add chocolate and coconut oil to a microwavable safe bowl. Microwave in 30 seconds intervals until chocolate is completely melted. Stir well between each interval.
  3. Add 2 tablespoons of melted chocolate to each muffin cup. Place the muffin pan in fridge for 10 minutes until chocolate hardens.
  4.  In a bowl, mix together peanut butter, protein powder, maple syrup and salt. Once the first layer of chocolate hardens, remove muffin pan from fridge and distribute about 1-2 teaspoon of the peanut butter filling to each muffin cup.
  5. Spoon the remaining chocolate on top of each cup and sprinkle generously with flaky sea salt. Place the muffin pan back into fridge for 15 minutes until top layer hardens.
