But when I made homemade strawberry pop tarts for the first time, I was shocked to discover what I’d been missing all those years. These homemade pop tarts are buttery, flaky, and so much better than the original. And the best part is, you can customize them however you’d like! So get creative when you make these heart shaped pop tarts!

Homemade Strawberry Pop Tarts Ingredients

  • Refrigerated Premade Pie Crust: There’s no need to fuss with a homemade pie crust when premade tastes just as good and saves you so much time.
  • Strawberry Jam: My homemade strawberry jam recipe takes less than 30 minutes to prepare. It’s got a bright, sweet, fresh flavor and chia seeds for extra fiber, protein and texture. Once you taste a spoonful, you’ll never choose storebought jam again!
  • Egg: Make an egg wash to brush the inside and outside of the pastry hearts. Putting it inside the pastry prevents the filling from soaking into the crust, making the pop tart soggy. On the outside, it develops a beautiful golden crust.

Icing

  • Powdered Sugar: This super fine sugar combines so well with the other ingredients.
  • Milk: For a spreadable icing, you need this.
  • Vanilla Extract: For vanilla flavored icing, add this.
  • Pink Food Coloring: This is optional but it’s super adorable, especially if you plan to serve these for Valentine’s Day.
  • Sprinkles: Add these because they bring a pop of color and make this treat even more delightful!

How to Make Homemade Strawberry Pop Tarts

Cut Out Heart Shapes from Dough: Preheat the oven to 400 degrees F. Unroll the premade pie crust on a counter or bakers mat. Using a heart shaped cookie cutter, cut out as many hearts that can fit on the pie crust. If you run out of space, knead the remaining pie crust and roll it out again to cut out more hearts.

Assemble the Heart Shaped Pop Tarts: Line a baking sheet with parchment paper and place half of the heart pieces on the sheet. Leave the remaining pieces for the top layer of the pop tart. Place a tablespoon of the strawberry jam in the center of each heart. In a small bowl, whisk the egg to create an egg wash.

Brush the inside edges of the heart with the egg wash. Place the remaining heart cut outs on top to finish off the pop tarts and use a fork to seal the edges. Use the fork to poke holes on the top of each pop tart then brush them with the egg wash.

Bake: Bake for 10-15 minutes. Allow them to cool completely before adding the icing.

Prepare the Icing: While the pop tarts are cooling, make the icing. In a bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. Once the consistency is smooth, add the food coloring.

Drizzle, Sprinkle & Serve: Drizzle the icing over the cooled pop tarts and finish off with your favorite Valentine’s sprinkles.

Pro Tips

  • Only roll out the pie crust dough once. If you keep re-rolling it, the dough will shrink, altering its flavor and consistency and it won’t bake as well.
  • Do not overfill the pastries or it will leak out of the sides as it bakes.
  • Wait for the pastries to cool before applying the icing. Otherwise, the pastry will absorb the icing, making the pop tarts soggy.

Variations and Substitutes

  • Store bought jam works for this recipe.
  • Other flavored jam can be used. I suggest trying cherry, blueberry, or lemon.
  • Want to make a different shape? You can use different shaped cookie cutters.

Can Heart Shaped Strawberry Pop Tarts Be Made Ahead?

If you want to save time, make the strawberry jam in advance.

Storing Leftovers

Although these are best served the day of, heart shaped pop tarts can be saved for later. Store leftover homemade pop tarts in an airtight container in the fridge for up to 3 days.

Common Questions

Can homemade strawberry pop tarts be toasted?

Unlike original Pop-Tarts, homemade strawberry pop tarts should not be placed in the toaster. The pastry isn’t sturdy enough and the frosting would make a mess. They are best enjoyed fresh out of the oven but if you must reheat them, gently reheat them in a toaster oven, air fryer, or even the microwave.

What is strawberry pop tart filling made of?

Storebought stawberry Pop-Tart filling includes dried strawberries, apples, and pears. It also contains high fructose corn syrup so homemade pop tarts are definitely the better option.
