Healthy Peanut Butter Chocolate Muffins

Healthy peanut butter chocolate muffins are soft, moist and so rich. They are made with almond flour, sweetened with banana and coconut sugar and loaded with natural peanut butter. These healthy muffins are so versatile, you can have them for breakfast, dessert or snack. I don’t know about you but chocolate for breakfast sound delightful to me.

A major ingredient in this recipe that took it to another level are these healthier SkinnyDipped peanut butter cups that are insanely delicious, low calorie and no sugar added. They add chunks of melted chocolate and peanut butter to the muffins that just melts in your mouth each bite.

Healthy Peanut Butter Chocolate Muffins

2 cups almond flour

1/3 coconut sugar

1/3  cup unsweetened cocoa powder

1 teaspoon  baking powder

1 teaspoon baking soda

1/4 teaspoon salt

1/3  cup unsweetened cocoa powder

2 eggs

2 ripe bananas, mashed

1/2 cup peanut butter

1/4 cup Maple /date syrup

1 1/2 tsp Vanilla extract

1/3 cup coconut oil

1 1/2 cup chopped peanut butter cups


  1. Preheat oven to 425° F. Spray or line a muffin pan with cooking spray or muffin cups.
  2. Whisk together almond flour, cocoa powder, coconut sugar, baking powder, baking soda and salt.
  3. In a separate bowl,  whisk together mashed banana, egg, maple syrup, coconut oil and vanilla extract.
  4. Add the chopped peanut butter cups and wet mixture to the dry ingredients. Spoon/fold using a spatula or wooden spoon to create a batter. Now add the peanut butter to the batter.
  5. Spoon batter into muffins cups filling them 3/4 of the way. Bake for 20 minutes.
  6. Cool muffins for 10 minutes in the muffin pan then transfer to a wire rack.
