This pot roast is one of those dinners that looks like you spent all day cooking but really, the oven does most of the work. It’s cozy, hearty, and perfect for nights when you want something homemade without hovering over the stove.

As a busy mom juggling a baby and a toddler, I’m all about meals that practically cook themselves. This one checks all the boxes: minimal prep, one pot, and leftovers that stretch into tomorrow’s lunch. If you’ve been looking for a family dinner idea that even your kids will eat, you’re in for a win with this one.
Why You’ll Love this Pot Roast Recipe
- It’s a true dump and go dinner. Once everything’s in the oven, you can walk away and come back to dinner ready.
- The oven does all the hard work while your house smells like a cozy Sunday dinner.
- It’s kid-approved. The tender veggies and savory broth are perfect for little eaters.
- Makes enough for leftovers, which means one less dinner to think about tomorrow.

Kid-Friendly Pot Roast Tips
Even though pot roast sounds fancy, it’s a great family meal that can be adapted for toddlers and picky eaters:
- Shred the beef finely: Little hands manage it better, and it blends well with mashed potatoes or rice.
- Cut veggies small: Before serving, chop carrots and potatoes into bite-sized pieces or mash them lightly for a soft texture.
- Serve it as a “build your own bowl”: I like to give my toddler small sections of beef, carrots, and potatoes so they can mix them how they wants. It gives a sense of control.
- Make mini pot roast sliders: For older kids, use leftovers in a small bun with melted cheese. It’s a fun twist for the next day’s lunchbox.

Equipment
Ingredients
- 3-4 lbs chuck roast
- 1 tbsp salt
- 1 tsp black pepper
- 2 tbsp olive oil
- 1 large onion chopped
- 6 garlic cloves minced
- 3 large carrots peeled and chopped into chunks
- 3 celery stalks chopped (optional)
- 6 cups beef broth
- 2 cups red wine optional — can sub with more broth
- 3 tbsp tomato paste
- 2 tbsp all-purpose flour for thickening
- 1 tbsp Worcestershire sauce
- 1 tbsp better than beef bouillon
- 2 sprigs fresh rosemary or 1 tsp dried
- 3 sprigs thyme or 1 tsp dried
- 2 bay leaf
Instructions
- Set your oven to 350°F (175°C).
- Pat the roast dry with paper towels and season generously with salt and pepper. Heat olive oil in a large Dutch oven over medium-high heat. Sear the roast on all sides until browned, about 3 minutes per side. Remove and set aside.
- In the same pot, add the chopped onions and sauté for 2–3 minutes until softened. Stir in the minced garlic and cook for 30 seconds until fragrant.
- Stir in the tomato paste and flour together, letting them cook for 1–2 minutes to deepen the flavor and remove the raw flour taste. The mixture should look thick and slightly golden.
- Pour in the red wine and scrape the brown bits from the bottom of the pot. Let simmer for 2 minutes.
- Stir in the 6 cups of beef broth, better than beef bouillon, Worcestershire sauce, rosemary, thyme, and bay leaf. Return the roast to the pot, making sure the liquid comes halfway up the meat.
- Cover the pot with a lid and bake for 3–3½ hours, or until the roast is tender and easily pulls apart with a fork.
- Once the meet is tender, taste the gravy and adjust the seasoning with more salt and pepper if needed. You can also adjust the seasonings half way through the cooking process.
- Remove herbs and bay leaf. If you want the sauce thicker, let it simmer uncovered on the stovetop for 5–10 minutes or whisk together 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir it into the sauce. Simmer until it reaches your desired consistency.
- Slice or shred the roast and spoon the rich gravy over the top.
