Creamy Tuscan Salmon

Creamy tuscan salmon is so rich and flavorful. This is a tender and juicy salmon simmered in a creamy garlic, sun-dried tomato and spinach sauce. You would not believe how quick and easy it is to make this dish. It’s the perfect family-friendly weeknight dinner that is ready in only 20 minutes.

4 salmon fillets

1 teaspoon salt

1 teaspoon pepper

1 teaspoon paprika

2 tablespoon olive oil

Tuscan Sauce

2 tablespoons unsalted butter

5 cloves garlic, grated or finely minced

1 small yellow onion, diced

5 ounces jar sun-dried tomatoes in oil

1 1/2 cup heavy cream

2 1/2 cup fresh spinach

1/2 teaspoon salt

1/2 teaspoon pepper

1 teaspoon crushed red pepper

1 teaspoon Italian seasoning

1/2 cup grated parmesan

1/4 cup water

1 tablespoon fresh parsley, finely chopped 


  1. How to make salmon: Season salmon with salt, pepper and paprika. Heat olive oil in a large skillet over medium heat. Sear the salmon for 3-5 minutes on each side or until cooked to your liking. Once salmon is cooked, remove from the skillet and set aside.
  2. In the same skillet, melt the butter and add the onion and garlic. Saute until the onion is translucent and the garlic is fragrant. Add the sun-dried tomatoes and saute for 2 minutes.
  3. Reduce the heat, add the heavy cream and water and bring to a gentle simmer. Stir occasionally. Season the cream with salt, pepper, crushed red pepper and Italian seasoning.
  4. Add spinach and allow it to wilt in the sauce then add the grated parmesan cheese. Stir well to melt the cheese thoroughly and allow the sauce to simmer on low heat for an additional 2 minutes.
  5. Add the salmon back to the sauce; spoon the sauce over salmon fillets and sprinkle with fresh parsley.
