Creamy Tuscan Chicken Ingredients

Chicken Breast

  • Chicken breasts: Use boneless, skinless chicken breasts. Slice them lengthwise to make 4 fillets. This allows the meat to cook faster and evenly.
  • Seasoning: I keep it simple and season the chicken with sea salt, ground black pepper, onion powder, and smoked paprika.
  • Sun-dried tomato oil: Purchase the sun-dried tomatoes packed in oil and you get a two-for-one special! Cook the chicken in the oil then add the tomatoes later. You can also cook the chicken with olive oil instead.

Creamy Tuscan Sauce

  • Sun-dried tomatoes: This gives the dish that rich, hearty rustic flavor. Drain it so you can use the oil separately. It is bolder with a deeper flavor than regular tomatoes.
  • Garlic cloves: Use grated or finely minced.
  • Dijon mustard: This adds a zesty, savory taste that enhances the overall flavor.
  • Chicken bone broth: I use this for the depth of flavor in the sauce.
  • Heavy whipping cream: For that signature velvety smooth sauce, this ingredient is essential.
  • Fresh spinach: This wilts as it cooks so don’t worry about overdoing it!
  • Parmesan cheese: Freshly grate the cheese for the best results.
  • Seasoning: I use salt and pepper to taste, and Italian seasoning (a blend of spices including thyme, basil, oregano, and rosemary).

How to Make Creamy Tuscan Chicken

Season and Cook Chicken Breasts

Season the chicken with salt, pepper, onion powder, and smoked paprika.

Heat the sun-dried tomato oil in a large skillet over medium heat. Sear the chicken breast on each side for 5-8 minutes until the chicken is cooked. Transfer the cooked chicken to a plate and set aside.

Sauté & Simmer Creamy Tuscan Sauce

Using the same skillet, saute the sun-dried tomatoes for 2 minutes until fragrant then add the garlic. Sauté for a few more minutes. Add the chicken bone broth, dijon mustard, Italian seasoning, and salt and pepper.

Stir well and allow the mixture to come to a gentle simmer. Now add the heavy whipping cream and spinach. Stir it together and let the spinach cook until it is wilted.

Add the parmesan cheese and stir it well until the cheese is melted. Allow the sauce to simmer for about 1-2 minutes then add the chicken back to the sauce. Spoon the sauce over the chicken and top with fresh parsley.

  • Creamy Tuscan Chicken Thighs: Use boneless, skinless chicken thighs as an alternative to chicken breasts. This is just based on preference.
  • Crock Pot/Slow Cooker:
  • Instant Pot: Sauté chicken breasts on high before adding heavy cream, broth, and cheese. Cook on high and set to pressure cooking mode for about 5 minutes. Then switch back to sauté on high. adding in spinach and sun-dried tomatoes.
  • More Green Vegetables: Add basil to complement the tomatoes. Spinach can be replaced with baby arugula, kale, or broccoli.
  • Add Mushrooms: For a heartier meal, add white or brown mushrooms. It can also be used as a meat replacement in a vegetarian variation.
