  • Pasta: This recipe uses cavatappi pasta (the corkscrew-shaped macaroni) because the cheese clings to the ridges. However, any similar pasta will work.
  • Three cheeses: Smoked gouda, Colby Jack, and sharp cheddar cheese.
  • Spices: This mac and cheese recipe is packed with flavor. I generously season it with cajun seasoning, dry mustard, onion powder, garlic powder, smoked paprika, cayenne pepper, salt, and black pepper.

There are a few different ways that you can cook lobster. Boiling is one of the easiest ways but if you want a more flavorful option, grilling, baking or broiling works best. I prefer to bake or broil my lobster. Here is how to bake the lobster tails for this recipe:

  • Preheat the oven to 400 degrees F.
  • Butterfly thawed lobster tails (cutting them in half vertically and push the meat up and out of the shell)
  • Place them on a baking sheet, brush with the tails with a generous amount of melted butter and sprinkle with cajun seasoning.
  • Bake for 10-12 minutes until the meat is firm and slightly opaque.

  1. Cook the pasta: Cook the cavatappi pasta in a boiling pot of salted water until al dente.
  2. Bake the lobster tails: Brush lobster tails with melted butter and sprinkle with cajun seasoning. Bake for 10-12 minutes.
  3. Make the cheese sauce: To a large pot, whisk together the butter and flour to form a roux. Add the milk, heavy whipping cream, and all the spices. Then whisk in the shredded cheeses until creamy.
  4. Assemble: Add the cooked pasta to the cheese sauce with half of the lobster meat. Stir well until the noodles are completely coated with the cheese. Pour half the mac and cheese into a baking dish, sprinkle some of the shredded cheese on top then add the rest of the mac and cheese. Add the leftover lobster meat on top, shredded cheese and bread crumbs then bake.

  • 5 Lobster Tails
  • 4 tbsp Butter
  • tsp Cajun Seasoning
  • Salt to taste
  • Black Pepper to taste

Pasta and Cheese Sauce

  • 1 lb Cavatappi Pasta
  • 2 cups Sharp Cheddar Cheese
  • cups Smoked Gouda Cheese
  • cups Colby Jack Cheese
  • ¼ cup All-Purpose Flour
  • 3 tbsp Unsalted Butter
  • 2 cups Milk
  • 2 cups Heavy Whipping Cream
  • ½ tsp Dry Mustard
  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder
  • 1 tsp Smoked Paprika
  • 1 tsp Cajun Seasoning
  • ¼ tsp Cayenne Pepper
  • ½ tsp Ground Black Pepper
  • ½ tsp Salt

Topping

  • ¼ cup Panko Bread Crumbs
  • 2 tbsp Fresh Parsley finely chopped

Instructions
 

Cook the Lobster

  • Preheat the oven to 400 degrees F. Butterfly the thawed lobster tails and place on a baking sheet.
  • In a microwavable safe bowl melt the butter. Brush or pour the melted butter over the lobster meat and then sprinkle with cajun seasoning.
  • Bake for 10-12 minutes until the meat is firm and slightly opaque.

Pasta and Cheese Sauce

  • Cook the Cavatappi pasta in boiling salted water according to the packaging instructions. Drain and set aside.
  • Shred all the cheese and toss them together in a bowl. Set aside.
  • In a large pot, melted the butter then gradually sprinkle in the flour while constantly whisking until a roux is formed. It should be thick and smooth.
  • Slowly pour in the milk and heavy cream while whisking at the same time.
  • Add the spices, salt and pepper and stir well. Bring the mixture to a low boil then add 1/2 of the shredded cheese blend.
  • Remove the pot from the heat and whisk the mixture together until the cheese is melted and creamy.

To Assemble

  • Chop the lobster meat into small pieces to your liking. Add half of the lobster meat and the cooked pasta to the cheese sauce and stir.
  • Pour half of the mac and cheese into a baking dish, sprinkle some of the left over cheese on top then add the rest of the mac and cheese.
  • Spread the remaining lobster meat on top and the shredded cheese (add more cheese if you like).  Sprinkle with bread crumbs and bake for 30-35 minutes.
  • Let it rest for about 10 minutes, sprinkle some fresh parsley on top then serve.
