Cream Cheese Stuffed French Toast (Strawberry Cheesecake)

Each slice is drenched in velvety cinnamon egg mixture, stuffed with a smooth and creamy cream cheese filling and topped with fresh strawberries. This cream cheese stuffed french toast is perfect for brunch, special occasions or just a fun breakfast treat.

Cream Cheese Stuffed French Toast

Ingredients

8 slices brioche bread

3 large eggs

1 1/4 cup almond milk

2 tablespoons maple syrup

1 teaspoon vanilla extract

1 1/2 teaspoon ground cinnamon

1/4 teaspoon salt

Cooking spray or butter

Cream Cheese Filling

 3 tablespoons unsalted butter, softened

8 oz block cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

Instructions

  1. Using an electric or handheld mixer, beat cream cheese and butter together until smooth. Note: You can mix with a wooden spoon in a bowl if you don't have a mixer but make sure the butter and cream cheese is softened to save you time and energy. Add vanilla extract and powder sugar. Mix together until a creamy and spreadable consistency is formed.
  2. Spread a generous amount of cream cheese filling on one slice of brioche bread then top with another slice to form a sandwich with cream cheese in the middle. Continue this step for all the slices.
  3. In a shallow bowl, whisk together egg, milk, maple syrup, vanilla extract, cinnamon and salt. Dip each sandwich in the mixture making sure that each side is completed coated.
  4. Grease a skillet or griddle with cooking spray or butter. Cook sandwiches on each side until golden brown and crisp.
  5. Top with fresh strawberries and enjoy.
