The first time I tried cowboy caviar I was immediately convinced that this might be one of the best dishes out there. I fell in love with the freshness of the vegetables and the crunch of all the ingredients. Not to mention, the dressing that added a great depth of flavor. I kid you not, I was shoveling the entire bowl down. The best part is, it’s surprisingly so easy to make. All of the hard work comes from chopping the vegetables.


  • Black beans
  • Black-eyes peas
  • Red bell peppers
  • Green bell peppers
  • Corn
  • Red onion
  • Fresh cilantro

Simple homemade dressing:

The dressing adds so much flavor to the beans and vegetables. It is a tangy and slightly sweet olive oil based dressing. You can even drizzle this dressing over your favorite salad. Here is what you’ll need:

  • Extra virgin olive oil
  • White wine vinegar
  • Lime juice
  • Maple syrup
  • Garlic powder
  • Cumin
  • Chili powder
  • Salt & pepper


This dip is incredibly easy to make. All you need to do is chop all the vegetables and toss them together with the dressing. That is seriously all there is to it.

  • Start by dicing the red onion, green bell pepper, and red bell pepper. Then finely chop the cilantro.
  • Drain the black bean, black-eyes peas and corn.
  • In a bowl combine all the ingredients for the dressing.
  • Finally, in a large bowl combine the chopped vegetables, beans, corn and dressing, Toss very well and serve. /

1 can  black beans

1 can black eyed peas

1 can sweet corn

½ cup red bell pepper

½ cup green bell pepper

½ cup red onion

¼ cup cilantro 


⅓ cup extra virgin olive oil

3 tablespoons white wine vinegar

2 tablespoons lime juice

1 tablespoon maple syrup

½ teaspoon garlic powder

½ teaspoon cumin

½ teaspoon chili powder

½ teaspoon ground pepper

½ teaspoon salt



  1. In a large bowl, combine black beans, black eyed peas, sweet corn, red bell pepper, green bell pepper, onion and cilantro.
  2. In a separate bowl, whisk together all the ingredients for the dressing and pour it over the other ingredients. Toss well until vegetables and beans are fully coated. 
  3. Serve immediately or keep covered and refrigerated.
