Can you make popsicles with coconut water?

Yes, you can absolutely make popsicles with coconut water. It freezes well and has a naturally sweet, mild taste that pairs perfectly with fresh fruit. Using coconut water is also a great way to add electrolytes and hydration to your popsicles without any added sugar.

Ingredients

  • Coconut water. Acts as the hydrating base and adds natural electrolytes without added sugar. You can use unsweetened or lightly sweetened, depending on what you prefer.
  • Mango. Adds tropical flavor and a soft texture that freezes well in popsicles.
  • Kiwis. Bright and tangy with a pretty green color that stands out in each mold.
  • Strawberries. Provide natural sweetness and a pop of color in every bite.
  • Blueberries. Small enough to freeze whole and hold their shape, adding bursts of flavor throughout.

How to Make Coconut Water Popsicles

Prep the Fruit

I start by peeling and slicing the mango, kiwis, and strawberries, then add the blueberries as they are. Cutting everything into bite-sized pieces makes it easier to fit into the molds and gives a nice mix of color and texture in each popsicle.

Fill the Popsicle Molds

Next, I evenly divide the fruit between the popsicle molds. I like to use a skewer or the end of a spoon to gently move the pieces around so they look colorful from every angle once frozen.

Add Coconut Water and Freeze

Then I slowly pour coconut water over the fruit, filling each mold to the top but leaving a little space for expansion. I place the sticks in the center of each mold and freeze them for at least 6 hours, but overnight is best.

Unmold and Enjoy Your Electrolyte Ice Pops

When we’re ready to enjoy them, I run warm water over the outside of the molds for a few seconds to loosen them. The popsicles slide right out and are ready to enjoy as a cool, refreshing treat.

Storing Instructions

Once frozen, I remove the popsicles from the molds and store them in a freezer-safe bag or container to prevent freezer burn. They’ll stay fresh for up to 3 weeks, though they rarely last that long in my house.

Recipe Variations/Tips

  • Use ripe fruit for the best flavor. Ripe mangoes, strawberries, and kiwis will be sweeter and more vibrant, which makes the popsicles taste even better.
  • Cut fruit into small, even pieces. This helps them fit better in the molds and ensures each popsicle has a good mix of fruit.
  • Pour the coconut water slowly. Doing this helps prevent air pockets and keeps the fruit in place as you fill the molds.
  • Leave a little space at the top of each mold. Coconut water expands as it freezes, so don’t fill to the brim.
  • Freeze overnight if possible. While 6 hours may be enough, overnight freezing ensures the popsicles are completely solid.
  • Run warm water over the molds before removing. This helps loosen the popsicles so they slide out easily without breaking.

Frequently Asked Questions (FAQs)

Is it okay to freeze coconut water?

Yes, coconut water can be frozen and still tastes great once thawed or used in popsicles. It freezes into a solid just like water but retains its subtle sweetness and electrolyte content.

Can I use frozen fruit instead of fresh?

Yes, frozen fruit can work in a pinch, but it may bleed color into the coconut water and change the final look of the popsicles. If you use frozen fruit, let it thaw slightly before adding it to the molds so it’s easier to arrange.

Will the fruit sink to the bottom?

Some lighter fruits may float, especially if the coconut water is poured too quickly. I recommend using a skewer or spoon to gently reposition the fruit so it stays evenly distributed.
