Red onion


Feta cheese

Olive oil

Lemon Juice

Italian seasoning

15 oz canned chickpea

1 cup cherry tomato, halved

1 cup cucumber, halved and sliced

½ cup red onion, diced

¼ cup fresh parsley

¼ cup feta cheese

¼ cup extra virgin olive oil

3 tablespoon lemon juice

1 teaspoon minced garlic

1 ½ teaspoon italian season

Salt and pepper to taste


  1. Make dressing: mix together olive oil, lemon juice, Italian seasoning, salt and pepper.
  2. In a medium-sized bowl, combine chickpeas, cucumber, tomato, onion, parsley and feta cheese.
  3. Drizzle the dressing over the salad and toss to coat.
