How to make shredded chicken from scratch: 

Shredded chicken can be used for a lot of different dishes and it is listed as ingredients in many recipes. Here is a quick and easy way to make homemade shredded chicken.

  1. Bring about 6 cups of water to a boil over medium to high heat. 
  2. Place boneless, skinlessless chicken breast or thighs to the boiling pot of water
  3. Season generously with salt, pepper, poultry seasoning, bay leaf and fresh thyme. Feel free to add more fresh herbs. 
  4. Reduce heat and allow it to simmer for 10-15 minutes depending on the size and amount of chicken you are poaching. 
  5. Check for doneness and make sure it is not pink on the inside. 
  6. Once chicken is cooked thoroughly, remove it from the broth, allow it to cool for a few minutes then break it into shreds using two forks or a hand mixer. Don’t forget to save the broth for soups, stews, sauces etc.

Ingredients

1 fresh pre-made pizza dough

2 cups shredded chicken (use store bought rotisserie chicken to save time; or cook your own)

1 fresh pre-made pizza dough

2 cups shredded chicken (use store bought rotisserie chicken to save time; or cook your own)

1/3 cup hot sauce

1/4 cup chili pepper sauce

1/4 cup unsalted butter, melted

1/4 tsp Worcestershire sauce

1 tsp white vinegar

salt & pepper to taste

1 cup shredded mozzarella cheese

1/3 cup blue cheese dressing

1/4 cup blue cheese crumble

Instructions

  1. Preheat oven to 425 degrees F. Line a baking sheet with parchment paper. Consult the directions on the pizza dough package to prepare. Set aside.
  2. See instructions above for “How to make shredded chicken from scratch” if you want to make your own. Otherwise you can use store bought rotisserie chicken. 
  3. In a saucepan over medium to low heat, combine buffalo sauce, chili pepper sauce, unsalted butter, Worcestershire sauce, white vinegar, salt and pepper. Allow the sauce to simmer for 3-5 minutes.
  4. In a bowl, toss the shredded chicken with the buffalo sauce. Evenly spread blue cheese dressing onto the prepared pizza dough. Add an even layer of shredded mozzarella cheese followed by buffalo chicken then finish off with the remaining mozzarella cheese.
  5. Bake for 12-15 minutes. Garnish with blue cheese crumble and green onion. Serve immediately.
