Fudgy Brownie Cookie

These fudgy brownie cookies are pure chocolate heaven. They are decadent, crisp on the outside and soft and gooey on the inside with chunks of melted chocolate chips. I promise you that you will want to eat the entire batch.

Fudgy Chocolate Brownie Cookies

1 1/2 cup all-purpose flour

1/2 cup butter, melted

1 egg

3/4 teaspoon baking powder

1/2 teaspoon salt

3/4 cup brown sugar

1/3 cup cocoa powder

1/4 cup semi-sweet chocolate, chopped

1/4 cup semi-sweet chocolate chips

1 tablespoon coconut oil

1 teaspoon vanilla extract


  1. Preheat oven to 350 degrees F. Line a baking sheet with parchment paper and set aside.
  2. In a medium sized bowl, whisk together the flour, baking powder, cocoa powder and salt.
  3. In a microwaveable bowl, melt the chopped semi-sweet chocolate chunks with coconut oil in two 30 seconds intervals. 
  4. In a separate bowl, whisk together melted butter, sugar, egg and vanilla extract until fully incorporated. Then add the melted chocolate. 
  5. Add the dry flour mixture to the chocolate mixture and mix until a dough is formed. Fold in chocolate chips.
  6. Separate the dough into tablespoon sized balls using an ice cream scoop or spoon and arrange on the prepared baking sheet. Press them down to flatten the top.
  7. Bake for 11 minutes and let them cool on the baking sheet for about 10 minutes. Note: The cookies will come out soft but they will harden as they cool.
