The noodles can be any type of pasta, and the veggies can be anything that you have on hand. Here are the ingredients that I used in this recipe:

  • Bone Broth: The base of the soup that is packed with anti-inflammatory properties.

How to Make Chicken Noodle Soup with Bone Broth

  • In a pot, saute the onion, carrots, and celery until they begin to soften, about 3-4 minutes.
  • Add the minced garlic and saute for an additional 30 seconds.
  • Add the boneless chicken breast to the pot with chicken bone broth, water, thyme, oregano, bay leaves, peppercorn, salt and pepper. Allow the mixture to come to a boil and cook the chicken for 15-20 minutes until fully cooked and no longer pink inside.
  • Remove the cooked chicken from the pot and let it cool slightly then use two forks or your preferred method to shred the chicken into bite sizes.
  • Add shredded chicken and noodles to the pot and cook the noodles according to the packaging instructions, typically around 8-10 minutes.
  • Taste the soup and adjust the seasoning with more salt and pepper if needed.
  • Garnish with freshly chopped parsley and enjoy.

Instead of using regular chicken broth I like to use chicken bone broth for its nutrient-dense benefits. It provides a number of essential vitamins like vitamin A and Vitamin K12, minerals like iron and zinc, as well as amino acids and omega-6 fatty acids. How to Make Shredded Chicken Breast

Shredded chicken can be used for a lot of different dishes and it is listed as an ingredient in many recipes. Here is a quick and easy way to make shredded chicken at home.

  1. Bring about 6 cup of broth or water to a boil over medium to high heat. 
  2. Place 2-3 boneless, skinless chicken breast into the boiling pot of broth or water.
  3. Season generously with salt, pepper, oregano, poultry seasoning, bay leaf and fresh thyme. Feel free to add more fresh herbs. 
  4. Bring the liquid to a summer over medium heat and cook for 15-20 minutes or until the chicken is fully cooked.
  5. To ensure that the chicken is fully cooked, use a meat thermometer. The internal heat should reach 165°F (74°C). If you do not have a meat thermometer, check to make sure the chicken is not pink on the inside.
  6. Once the chicken is cooked thoroughly, remove it from the broth and let them cool slightly.
  7. Use two forks, your hands, or mixer to pull the chicken apart into thin shreds.

How to Make Chicken Noodle Soup in Instant Pot

While it might seem like a dish that takes all day to make, it can actually be quite simple – especially if you have an Instant Pot. Here’s how to make a delicious homemade chicken noodle soup in just a few minutes using your Instant Pot.

  1. Start by sautéing onion, carrots and celery until they begin to soften, about 3-4 minutes. Then add the garlic.
  2. Add the boneless chicken breast, broth, thyme, bay leaves, peppercorn, salt and pepper.
  3. Secure the the Instant Pot lid and set the valve to “sealing” and select the “pressure cook” mode.
  4. Set the cooking time to 8 minutes at high pressure and let it cook.
  5. Once the cooking time is complete, carefully perform a quick pressure release by turning the valve to “venting.” Be cautious of the hot steam.
  6. Once the pressure has released, remove the chicken and shred it. Return the shredded chicken to the Instant Pot along with the egg noodles or pasta. Make sure they are submerged in the liquid. You can bring the mixture to a simmer using the “Saute” mode and cook for 3-5 minutes or until noodles are al dente.
  7. Taste and adjust the seasoning with more salt and pepper if needed then garnish with freshly chopped parsley.

Yes! However, that can be avoided. When the noodles are frozen and thawed they tend to become really mushy. Even if storing in the fridge, the noodles will eventually soak up the broth. To prevent this from happening, simply separate the broth and store in separate containers. If you are making this soup to freeze for later, prepare it according to the recipe and omit the noodles. Whenever you are ready to enjoy a warm bowl of chicken noodle soup, all you have to do is cook some egg noodles and add to your already prepared broth.
