French Toast Muffin Cups
Equipment
Ingredients
- 6 slices of bread chopped into cubes, leftover crusts work great!
- 3 large eggs
- 3/4 cup milk
- 3 tbsp maple syrup or honey
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1 tsp vanilla extract
- 1/4 tsp almond extract
- A pinch of salt
- Optional: chopped fruit chocolate chips, sprinkles or nuts
Instructions
- Preheat your oven to 350°F (175°C). Lightly grease a muffin tin with non-stick spray or butter to prevent sticking.
- If using fresh bread, slice it into small cubes (about 1-inch pieces). If using leftover bread crusts (from homemade Uncrustables or sandwiches), chop them into bite-sized pieces.
- In a large mixing bowl or measuring cup, whisk together egg, milk, maple syrup, vanilla extract, almond extract, cinnamon, nutmeg and a pinch of salt.
- Fill each muffin cup with the cubed bread and top it with fruits or any topping of choice.
- Evenly pour the custard mixture (wet ingredients) in each muffin cup, making sure to coat all the bread pieces. Let it sit for about 3 minutes to absorb the liquid. Press them down slightly (using the back of a spoon or your hands) to help them hold their shape.
- Bake for 20–25 minutes, or until the tops are golden brown and slightly crispy and the muffin cups are set. To check for doneness, insert a toothpick in the center—if it comes out mostly clean, they’re ready.
- Let the muffins cool in the tin for 5 minutes, then carefully remove them.
- Serve warm with a drizzle of maple syrup.
Notes
- Fridge: Store in an airtight container for up to 4 days.
- Freezer: Freeze in a single layer, then transfer to a freezer safe bag for up to 3 months.
- To Reheat: Microwave for 30 seconds or warm in the oven at 350°F for 5–7 minutes.

What can you swap for the almond extract? We have nut allergies in our house.
Just leave it out. It adds a nice nutty flavor but its not a non-negotiable ingredient.
