Ingredients

2 slices bread 

1 whip of unsalted butter

3 slices maple bacon

½ avocado

¼ cup red bell pepper, julienned

2 slices Colby Jack cheese

1 slice pepper jack cheese

Salt & pepper

Instructions

  1. Cook bacon in a pan or oven until crisp.
  2. Evenly spread butter over the outside of each slice of bread.
  3. Layer one slice of the bread (non butter side) with bacon, avocado, cheese, salt & pepper then top with the other slice. 
  4. Heat a skillet over low heat. Grill sandwich for 3-4 minutes until golden brown on each side.
