Let me tell you, I totally get what it’s like when 5 p.m. rolls around and your brain is fried. You want something easy, fast, and (ideally) something your kids won’t complain about. This sheet pan chicken sausage and veggies is a lifesaver on those evenings.
You get juicy, flavorful sausage, perfectly roasted veggies, and crispy potatoes all cooked together on one pan. It’s a balanced, hearty meal that tastes amazing, looks colorful on the plate for kids, and gets devoured by the whole family (including the toddlers). It has become a go-to in our household when we need a no fuss family meal that doesn’t feel like takeout.
Tips to Save You Time
- Pre-chop veggies in the morning or on Sunday to save time at dinner.
- Use parchment paper for truly effortless cleanup.
- Keep veggies separate on the pan for picky eaters who don’t like foods touching.
- Double the batch and save leftovers for wraps, lunchboxes, or the next night’s dinner.
- Add a dip — honey mustard, ranch, or yogurt sauce makes veggies way more fun for kids.
Kid Friendly Variations
- Use apple chicken sausage and add chunks of apples or sweet potatoes for a naturally sweet version.
- Try maple Dijon glaze for a cozy fall flavor.
- Add shredded cheese in the last few minutes for extra melty goodness.
- Swap veggies for your family’s favorites — green beans, carrots, or corn work perfectly.
