Break it apart with a wooden spoon, or meat mincer. Once it’s half way cooked, add half of the taco seasoning blend and continues to cook until the meat is no longer pink. This usually takes about 5 minutes. Once it’s done cooking, remove the turkey from the pot and set it aside.

Sauté the Vegetables: In the same skillet sauté the diced onion, bell pepper, and garlic over medium heat until the vegetables soften, about 3 minutes.

Cook the Sweet Potatoes: Add the cubed sweet potatoes, diced tomatoes, corn and black beans to the skillet along with the remaining taco seasoning blend. Stir everything together and let it cook, stirring occasionally, until the sweet potatoes are tender (about 10 minutes).   • 2 tbsp olive oil
  • 1 lb ground turkey

  • 3 cloves garlic minced
  • 1 packet taco seasoning or homemade seasoning

  • 1 can diced tomatoes drained
  • fresh cilantro chopped (for garnish)
  • Lime wedges for garnish
  • Shredded cheese (cheddar or Mexican blend) for topping
